Kyrgyz Clay – Firm, Layered and Velvety, Popular Brand Picked at Random (Edible Clay)

“A firm crunch that breaks into delicate layers and melts into a rich, velvety cream.”

Kyrgyz Clay is an unsalted clay from Kyrgyzstan, sold in sealed 100g packets from one of the popular Kyrgyz brands. I pick the brand at random, and each one has its own take, so it's a good way to work your way through traditional Kyrgyz clay. It starts with a firm crunch, gives way to fine, delicate layers, then melts slowly into a dense, velvety cream that clings to the palate. The flavour is properly earthy: intense clay with dusty undertones and a subtle sweet or astringent edge depending on the batch.
