How moisture actually affects your crunch

If texture is the whole point of this hobby, moisture is the thing quietly controlling it behind the scenes.

Clay and soil are held together by mineral bonds and small amounts of water, and that water content changes everything about how a piece behaves. Too much moisture and the clay softens, sometimes to the point of feeling muddy or sticky, and you lose the crisp bite entirely. Too little and it goes the other way, brittle and powdery rather than satisfying. The sweet spot in the middle is what gives you that clean snap and proper grind between your teeth.

Too moist tends to feel soggy or chewy, and it takes a lot of the ritual out of it. Perfectly dry gives you the crisp snap most people are actually chasing, better flavour too. Too dry and it turns dusty and fragile, more mess than pleasure.

Keeping your stash in that sweet spot isn't complicated. Airtight containers keep humidity out. A cool, dry spot away from heat stops clumping. A silica packet or a natural desiccant helps if your storage isn't ideal. And keep it away from damp hands or anything wet until you're actually ready for it.

I source and package with this in mind precisely so your stash arrives at the right moisture level and stays there. Keep it dry, and the crunch takes care of itself.
