West African Ayilo is Ghanaian clay made from a single bentonite source, traditionally baked and often smoked. It has a medium, gritty crunch, with a strong initial bite that gradually breaks down into a milder, slightly creamy or nutty finish. Expect bold earthy and mineral flavour, pronounced smokiness, chalky undertones and subtle sour or tangy notes, followed by a softer, more rounded finish.
